Thistle aperitivi is a longtime tradition in Italy. We’re adapting that tradition to our lifeway here in the Mid-Atlantic.

Artichokes and other edible thistles thrive in our regional climate. They grow well here on our farm.

We combine artichoke, cardoon, and blessed thistle with aromatic herbs, making something local to us.

Thistle is an elegant addition to a Brooklyn or Sour. It pairs well with limoncello, or as an opening aperitif before a meal.
